Banana bread with chocolate

INGREDIENTS

280 g wheat flour (type 405 | 550)
2 tsp baking powder
1 pinch of salt
1 pack of vanilla sugar
100 g brown sugar
1 pinch of cinnamon
4 ripe bananas
170 g neutral-tasting oil (e.g. Mazola)
2 eggs (size M)
100 g chocolate (e.g. dark chocolate or chocolate drops)
2 tbsp maple syrup

PREPARATION

1. Preheat the oven to 180 degrees (top/bottom heat). Line a loaf pan (length 25 cm) with baking paper. Mix the flour, baking powder, salt, vanilla sugar, sugar and cinnamon in a large bowl.

2. Peel 3 bananas and mash them evenly with a fork to form a fine puree. Add the oil and eggs and mix everything thoroughly. Add the wet ingredients to the dry ingredients and stir with a whisk or spoon until everything is just combined.

3. Roughly chop the chocolate and fold into the dough. Put the dough in the loaf pan and smooth it out. Peel the remaining banana, halve it lengthways and place it on the dough with the cut sides facing up. Press down lightly and brush with maple syrup.

4. Bake the banana bread on the middle rack for 55-60 minutes until golden brown*. Remove from the oven. Allow to cool in the pan for a few minutes. Then remove and allow to cool completely on a cake rack. Enjoy! If packed airtight and stored in a cool place, the banana bread with chocolate will stay moist for 5-6 days.
