Extra Moist Apple Cake

Ingredients

1. For the cake:

1. 8.8 oz (250g) all-purpose flour
  2. 7 oz (200g) granulated sugar
  3. 3.5 oz (100g) melted unsalted butter
  4. 4 large eggs
  5. 2 teaspoons baking powder
  6. 1 teaspoon cinnamon
  7. 1/2 teaspoon nutmeg
  8. 1/4 teaspoon salt
  9. 2-3 peeled and diced apples (about 10.6 oz/300g)

2. For the streusel (optional):

1. 3.5 oz (100g) all-purpose flour
  2. 1.8 oz (50g) granulated sugar
  3. 1.8 oz (50g) cold unsalted butter
  4. 1/2 teaspoon cinnamon

Instructions

1. Preheat oven to 350°F (180°C).

2. In a large bowl, whisk flour, sugar, baking powder and spices.

3. Add melted butter, eggs and mix until smooth.

4. Fold in diced apples.

5. Pour batter into a 9-inch (22-24 cm) round cake pan.

6. If desired, prepare streusel by mixing ingredients, then sprinkle over cake.

7. Bake 40-45 minutes or until golden brown.

8. Let cool 10 minutes before serving.
