Slow Cooker Creamy Tortellini Soup
Ingredients
1. 1 (14.5 oz) can diced tomatoes
2. 1 (15 oz) can vegetable broth
3. 1 cup heavy cream
4. 1 tablespoon olive oil
5. 1 onion, chopped
6. 3 cloves garlic, minced
7. 1 teaspoon dried basil
8. 1 teaspoon dried oregano
9. Salt and pepper, to taste
10. 1 (9 oz) package cheese-filled tortellini
11. Grated Parmesan cheese, for serving (optional)
12. Fresh parsley, chopped (optional)
Instructions
1. Add ingredients to slow cooker: Combine diced tomatoes, vegetable broth, heavy cream, olive oil, onion, garlic, basil, oregano, salt and pepper.
2. Cook on low: 6-8 hours or high: 3-4 hours.
3. Add tortellini: Stir in tortellini during last 30 minutes of cooking.
4. Serve: Ladle into bowls, top with Parmesan cheese and parsley (if desired).
Variations
1. Spicy: Add red pepper flakes or diced jalapeños.
2. Italian Sausage: Add cooked sausage for added flavor.
3. Roasted vegetables: Add roasted vegetables (e.g., zucchini, bell peppers).
4. Spinach: Stir in fresh spinach leaves during last 10 minutes.
