Fondant Chocolat-Mascarpone

Fondant Chocolat-Mascarpone recipe:

Ingredients

1. Cake:
2. 2 ¾ cups (315g) all-purpose flour
3. 1 cup (200g) granulated sugar
4. 6 ounces (170g) best-quality dark chocolate (70% cocoa), broken into pieces
5. 4 large eggs, separated
6. 1 teaspoon pure vanilla extract
7. 1/2 teaspoon salt
8. Mascarpone Frosting:
9. 8 ounces (225g) mascarpone cheese
10. 1/2 cup (100g) granulated sugar
11. 2 tablespoons unsweetened cocoa powder
12. 2 teaspoons vanilla extract
13. Optional:
14. Fresh raspberries or chocolate shavings for garnish

Instructions

1. Preheat: Preheat oven to 425°F (220°C). Butter and flour 6-inch (15cm) round cake pan.

2. Melt Chocolate: In a double boiler, melt chocolate over low heat.

3. Whisk Egg Yolks: Whisk egg yolks and granulated sugar until pale. Whisk in melted chocolate.

4. Whisk Egg Whites: Whisk egg whites until stiff peaks. Fold into chocolate mixture.

5. Add Flour: Fold in flour, vanilla extract, and salt.

6. Pour Batter: Pour into prepared pan. Smooth top.

7. Bake: Bake 25-30 minutes or until edges set and center slightly jiggly.

8. Cool: Let cool 10 minutes. Invert onto wire rack.

9. Make Frosting: Beat mascarpone, granulated sugar, cocoa powder, and vanilla extract until smooth.

10. Assemble: Place cooled cake on serving plate. Top with mascarpone frosting.

11. Garnish: Garnish with fresh raspberries or chocolate shavings, if desired.
