Mascarpone and Raspberry

Mascarpone and Raspberry Yule Log

Ingredients

1. Genoise:
1. 1 1/2 cups (190g) all-purpose flour
  2. 1 cup (200g) granulated sugar
  3. 3 large eggs
  4. 1/2 cup (120ml) whole milk
  5. 1/4 cup (60ml) vegetable oil
  6. 1 teaspoon pure vanilla extract
2. Mascarpone Cream:
1. 8.8 oz (250g) mascarpone cheese
  2. 1 cup (200g) powdered sugar
  3. 2 tablespoons freshly squeezed lemon juice
  4. 1/2 teaspoon pure vanilla extract
3. Raspberry Coulis:
1. 1 cup (120g) fresh raspberries
  2. 1/4 cup (60g) granulated sugar
  3. 2 tablespoons water
4. Decoration:
1. Fresh raspberries
  2. Mint leaves

Instructions

1. Preheat oven to 350°F (180°C).

2. Prepare genoise: Whisk flour, sugar, eggs, milk, oil and vanilla. Pour into a log-shaped mold.

3. Bake for 25-30 minutes.

4. Prepare mascarpone cream: Whisk mascarpone, powdered sugar, lemon juice and vanilla.

5. Prepare raspberry coulis: Blend raspberries, sugar and water. Strain for a smooth coulis.

6. Assemble the log: Spread mascarpone cream over genoise, then add raspberry coulis.

7. Decorate with fresh raspberries and mint leaves.
