Pineapple Juice Cake

Pineapple Juice Cake recipe

Ingredients

1. Cake:
1. 2 1/4 cups (285g) all-purpose flour
  2. 1 1/2 cups (185g) granulated sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 1/2 cup (115g) unsalted butter, softened
  6. 1 cup (240ml) pineapple juice
  7. 2 large eggs
  8. 1 teaspoon vanilla extract
2. Glaze (optional):
1. 1 cup (200g) powdered sugar
  2. 2-3 tablespoons pineapple juice

Instructions

1. Preheat: Oven to 350°F (175°C). Grease two 9-inch (23cm) round cake pans.

2. Mix dry ingredients: Flour, sugar, baking powder and salt.

3. Combine wet ingredients: Butter, pineapple juice, eggs and vanilla extract.

4. Combine mixtures: Pour wet ingredients into dry ingredients; mix until smooth.

5. Divide batter: Evenly distribute between prepared pans.

6. Bake: 30-35 minutes or until a toothpick comes out clean.

7. Cool: 10 minutes in pans, then transfer to wire racks.

8. Glaze (optional): Whisk powdered sugar and pineapple juice; drizzle over cooled cake.
