Gingerbread cake

Gingerbread cake with sponge cake and a mascarpone and orange filling is the recipe for the holidays.ย With cinnamon and gingerbread spice, the simple cake tastes like Christmas.
INGREDIENTS
FOR THE DOUGH
4 eggs (size M)
120 g sugar
4 tbsp cold water
70 g wheat flour (type 405)
50 g starch
2 tsp cocoa
2 tsp gingerbread spice
1 tsp baking powder
1 pinch of salt
Some fat for the mold
Some flour for the mold
FOR THE FILLING
1 orange
4 sheets of gelatine
300 g cream
1 pack of cream stiffener
4 tbsp sugar
200 g mascarpone
100 g yogurt
ยฝ tsp cinnamon or gingerbread spice as desired
ALSO
Decorated gingerbread
Christmas spices (e.g. star anise, cinnamon stick or orange peel)
Some ground cinnamon
PREPARATION
Step 1
Preheat the oven toย Preheat to 180 degrees top/bottom heat (fan oven: 160 degrees). Grease a springform pan (ร 26 cm) and dust with a little flour. For the dough, put the eggs, sugar and water in a metal mixing bowl and heat slightly over a water bath. Beat with the whisk attachment of a hand mixer until it forms a foamy egg white mixture.
Step 2
Mix the dry ingredients in a separate bowl, sieve onto baking paper and carefully fold into the egg white mixture in three portions using a dough spatula. Make sure to carefully fold in the dry ingredients by hand and not to stir too quickly so that the mixture remains nice and airy.
Step 3
Pour the sponge cake mixture into the prepared springform pan, smooth it out and bake in the preheated oven for around 20 minutes. After baking, let the base cool completely on a cake rack, then remove the springform pan edge.
