Ingredients

1. 1 1/2 cups (190g) all-purpose flour
2. 1 cup (200g) granulated sugar
3. 6 ounces (170g) best-quality dark chocolate (70% cocoa), melted
4. 4 large eggs, separated
5. 1 teaspoon vanilla extract
2. Chocolate Mousse Layers
1. Dark Chocolate Layer: 8 ounces (225g) dark chocolate (70% cocoa), melted
2. Milk Chocolate Layer: 8 ounces (225g) milk chocolate, melted
3. White Chocolate Layer: 8 ounces (225g) white chocolate, melted
4. 1 cup (240ml) heavy cream, whipped
5. 1 teaspoon vanilla extract

1. Fresh raspberries or chocolate shavings
2. Whipped cream
Instructions
1. Preheat: Oven to 350°F (180°C). Grease and flour a 9-inch (23cm) springform pan.
2. Prepare Cake Base: Whisk flour, sugar, and melted chocolate. Add egg yolks and vanilla; mix until combined. Beat egg whites until stiff peaks form; fold into chocolate mixture. Pour into prepared pan.
3. Bake: 25-30 minutes or until set. Let cool completely.
4. Prepare Mousse Layers: In separate bowls, whip heavy cream and vanilla until stiff peaks form. Fold whipped cream into melted chocolate until combined.
5. Assemble: Divide cake base into three layers. Spread Dark Chocolate Mousse on the first layer, Milk Chocolate Mousse on the second, and White Chocolate Mousse on the third.
6. Chill: Refrigerate for at least 3 hours or overnight.
7. Garnish: Top with whipped cream, fresh raspberries, or chocolate shavings.
