Beef roast

You can easily prepare our delicious beef roast according to grandma’s recipe in the oven! It is so wonderfully juicy and tender. It comes with a wonderful sauce with red wine.

INGREDIENTS

FOR THE BEEF ROAST

1 kg beef roast (e.g. shoulder piece or brisket)
¼ tsp salt
2 – 3 pinches of pepper
20 g flour
2 carrots
¼ celery
2 onions
2 tbsp tomato paste
300 ml red wine
500 ml beef stock or water as an alternative
1 bay leaf

ALSO

50 ml sunflower oil or clarified butter for frying

PREPARATION

1. Season the beef roast all over with salt and pepper, roll in flour and shake off the excess flour.  In a roasting pan or frying pan, fry the roast all over in oil or clarified butter until it is golden yellow.

2. Peel the carrots, celery and onions and cut into 2 x 2 cm cubes. Put the vegetables in the roasting pan or frying pan and fry for about 5 minutes. Remove the roast and set aside. Add the tomato paste and fry slowly.

3. As soon as the tomato paste has darkened a little, deglaze with 1/3 of the red wine and allow to simmer. Repeat this process twice more so that the sauce becomes strong and dark. Then pour in beef stock or water.

4. Add the bay leaf. Preheat the oven to 150 degrees top and bottom heat (130 degrees fan oven). Put the meat in a casserole dish, add the sauce from the roasting pan or frying pan and cook in the oven on the middle shelf for about 1.5-2 hours.

5. Remove the roast from the stock and cut into slices. Pass the sauce through a fine sieve into a pan. Strain the vegetables as well. This makes the sauce nice and creamy. Heat the roast slices again in the sauce and serve. Enjoy!
