Chocolate Prune Cake with Cream Cheese Frosting
Ingredients:
For the Cake:
½ cup pureed prunes (see recipe card for making from dried plums)
1 cup granulated sugar
2 eggs
1 ½ cups all-purpose flour
½ cup unsweetened dark cocoa powder
1 tablespoon cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon kosher salt
½ cup strong brewed coffee, cooled (decaf works fine!)
½ cup milk
For the Frosting:
12 oz reduced-fat cream cheese (1/3 the fat)
1 teaspoon vanilla extract
¼ cup raw honey (adjust to taste)
2 tablespoons powdered sugar
Mini chocolate chips for decorating (optional)
Instructions:
1. Prepare the Cake:
Make Pureed Prunes: If you haven’t already, make your own prune puree by blending dried plums with a bit of warm water until smooth. You’ll need about ½ cup for this recipe.
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan, or line it with parchment paper.
Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, cocoa powder, cinnamon, baking soda, baking powder, and salt. Set aside.
Combine Wet Ingredients: In a large bowl, beat together the granulated sugar and eggs until light and fluffy. Add in the prune puree and mix until well combined. Then add the cooled brewed coffee and milk, stirring to combine.
Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until smooth and fully combined.
Bake the Cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan on a wire rack.
2. Make the Frosting:
In a medium bowl, beat the reduced-fat cream cheese with a hand mixer until smooth.
Add the vanilla extract, raw honey, and powdered sugar. Continue to beat until the frosting is smooth and fluffy.
3. Assemble the Cake:
Once the cake has cooled, frost it generously with the cream cheese frosting.
Decorate with mini chocolate chips if desired for extra sweetness and visual appeal.
4. Serve:
Slice and enjoy the rich, moist cake with a delicious cream cheese frosting!
