Baked apple cake

INGREDIENTS
FOR THE BATTER
130 g soft butter
120 g sugar
½ tsp gingerbread spice
1 pinch of salt
3 eggs
100 g wheat flour (type 405)
50 g ground almonds
1 tsp baking powder
FOR THE APPLE FILLING
800 g apples (e.g. Topaz, Cox Orange)
2 tbsp sugar
2 tbsp lemon juice
150 ml apple juice
1 pack vanilla pudding powder
50 ml water
FOR THE CREAM
250 g low-fat quark
70 g sugar
500 g cream
2 packs cream stiffener
FOR GARNISH
1 apple
1 tbsp sugar
1 pack bourbon vanilla sugar
50 ml apple juice
A little cinnamon
PREPARATION
1. Preheat the oven to Preheat to 180 degrees top/bottom heat (fan oven: 160 degrees). Line a springform pan (Ø 26 cm) with baking paper.
2. Beat soft butter with sugar, spices and salt until fluffy. Add eggs one at a time and keep beating. Mix flour with almonds and baking powder and stir in briefly. Place in the pan, smooth out and bake for approx. 25-30 minutes. Allow to cool.
3. Peel and core the apples and cut into fine cubes. Place in a large pot, mix with sugar and lemon juice. Sauté the apple cubes for 3-4 minutes while stirring. Add apple juice. Mix pudding powder with water until smooth and add to the boiling apple mixture and allow to thicken. Set the apple filling aside.
4. Remove the cooled base from the pan and place on a cake plate. Place the cleaned springform pan edge around the base. Add hot apple filling on top and smooth out. At least. Chill for 15 minutes.
5. Mix the quark with the sugar. Beat the whipped cream until stiff, adding the cream stiffener. Mix the quark with the whipped cream. Spread the cream on the apple mixture. Chill for at least 1 hour.
6. To garnish, peel and core the apple. Cut into even cubes. Melt the sugar in a pan until a light brown caramel has formed. Add the apple cubes with the vanilla sugar. Deglaze with apple juice and simmer for 2-3 minutes. Set aside.
7. Remove the cake from the tin. Dust the cake with a little cinnamon if you like and garnish with the caramelized apple cubes.
