Mandarin Orange Pineapple Cake
Ingredients:
For the Cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 can (15 oz) mandarin oranges, undrained
1 can (8 oz) crushed pineapple, undrained
1 teaspoon vanilla extract
For the Frosting (optional):
1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup crushed pineapple (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
Mix Dry Ingredients:
In a large bowl, sift together the flour, sugar, baking soda, and salt.
Combine Wet Ingredients:
In a separate bowl, beat the eggs lightly.
Add the mandarin oranges (with juice), crushed pineapple (with juice), and vanilla extract to the eggs. Mix well.
Mix the Batter:
Gradually add the wet mixture to the dry ingredients. Stir gently until just combined. Do not overmix.
Bake the Cake:
Pour the batter into the prepared pan(s).
Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before frosting.
Prepare the Frosting (Optional):
In a mixing bowl, beat the cream cheese and butter until smooth and creamy.
Add the powdered sugar and vanilla extract, and mix until well combined.
Fold in crushed pineapple if desired.
Frost and Serve:
Spread the frosting evenly over the cooled cake.
Slice, serve, and enjoy!
