Chocolate Banana Oat Bread

Ingredients
For the Bread:
120g (3/4 cup + 1 tbsp) oat flakes
200ml (5/6 cup) hot milk
2 eggs (or substitute with 2 tbsp corn or cassava starch mixed with 4 tbsp water)
2 bananas, mashed
Vanillin (optional, for flavor)
40g (1/2 cup) bitter cocoa powder
1 teaspoon baking powder
Walnuts (optional, chopped)
Chocolate chips (optional)
For the Topping:
100g (1/2 cup + 2 tbsp) chocolate, chopped
40ml (3 tbsp) boiling milk
Instructions
1. Prepare the Oat Mixture:
Preheat your oven to 180°C (350°F).
In a mixing bowl, pour the hot milk over the oat flakes and let them soak for 5 minutes.
2. Mix the Wet Ingredients:
Add the mashed bananas to the soaked oats.
If using eggs, beat them lightly and stir into the mixture. If using starch as a substitute, mix the starch with water and add to the batter.
Stir in vanillin, if desired, for added flavor.
3. Combine Dry Ingredients:
In a separate bowl, mix the cocoa powder and baking powder.
Gradually fold the dry ingredients into the wet mixture until fully combined.
4. Add Optional Ingredients:
If desired, fold in chopped walnuts and/or chocolate chips for extra texture and flavor.
5. Bake the Bread:
Pour the batter into a greased or parchment-lined loaf pan.
Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool slightly before removing from the pan.
6. Prepare the Topping:
Heat the milk until boiling.
Pour the hot milk over the chopped chocolate and let sit for 1-2 minutes. Stir until smooth and glossy.
7. Add the Topping and Serve:
Spread the chocolate topping over the cooled bread.
Slice and enjoy!
