Ingredients (Makes 2 Sandwiches):
4 slices of bread (sourdough, ciabatta, or your favorite type)
2 tbsp butter, softened
1 tbsp olive oil
6 oz (170g) cooked shrimp, chopped
1 clove garlic, minced
1/2 tsp paprika
1/4 tsp chili flakes (optional)
Salt and pepper, to taste
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 tbsp mayonnaise (optional, for extra creaminess)
1 tsp lemon juice
Fresh parsley or cilantro, chopped, for garnish
Instructions:
1. Prepare the Shrimp Filling:
Heat the olive oil in a skillet over medium heat.
Add the garlic and sauté until fragrant (about 30 seconds).
Stir in the shrimp, paprika, chili flakes, salt, and pepper. Cook for 2–3 minutes until heated through.
Remove from heat and toss the shrimp with lemon juice and optional chopped parsley or cilantro.
2. Assemble the Sandwiches:
Spread a thin layer of mayonnaise on one side of each slice of bread (optional).
Layer the shrimp mixture onto two slices of bread.
