Ingredients

For the Base:

250g (9 oz) plain biscuits (e.g., Digestive biscuits, Marie biscuits, or Graham crackers)
¼ cup (60g) unsalted butter, melted

For the Cream Filling:

250g (9 oz) cream cheese, softened
½ cup powdered sugar
1 cup heavy whipping cream
1 tsp vanilla extract

For the Topping:

2 tbsp butter, softened
¼ cup rainbow sprinkles
Optional: 1 tbsp caster sugar (for extra crunch)

Instructions

Prepare the Base:

Crush the biscuits into small crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
Melt the butter and mix it with the crushed biscuits until well combined.

Line a loaf pan (approximately 9×5 inches) with parchment paper, then press the biscuit mixture into the bottom of the pan to form a firm, even base. Place the pan in the fridge to set while you prepare the filling.

Make the Cream Filling:

In a large bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
In another bowl, whip the heavy cream with vanilla extract until it forms stiff peaks.

Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assemble the Fridge Loaf:

Spread a layer of the cream mixture over the chilled biscuit base.
Add another layer of crushed biscuits (if desired) and top with more cream mixture. Continue layering until all the cream and biscuit crumbs are used, finishing with a cream layer on top.
Create the Fairy Bread Topping:

In a small bowl, mix the softened butter with caster sugar (if using). Spread this buttery mixture over the top layer of cream.
Sprinkle rainbow sprinkles generously on top to create the Fairy Bread look.
Chill:

Cover the loaf with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to set and the loaf to firm up.
Serve:
