Here’s a simple and tasty recipe for Zucchini Slice Roll-Ups. These are great as appetizers, snacks, or even a light meal!

Zucchini Slice Roll-Upsaa
Ingredients
2 medium zucchinis, sliced thinly (about 1/4 inch thick)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
1 teaspoon garlic powder
1 teaspoon dried Italian herbs (such as oregano and basil)
Salt and pepper to taste
1 cup marinara sauce (for dipping)
Olive oil (for drizzling)
Fresh basil or parsley (for garnish, optional)


Instructions


Preheat the Oven:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Zucchini:

Lay the zucchini slices on the prepared baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Roast in the oven for about 10-15 minutes until slightly tender. Remove from the oven and let cool.


Make the Filling:

In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, egg, garlic powder, Italian herbs, salt, and pepper. Mix well until smooth.
Assemble the Roll-Ups:

Once the zucchini slices have cooled, spread a spoonful of the cheese mixture onto each slice. Roll them up tightly and place them seam-side down on the baking sheet.
Bake:

Drizzle a little olive oil over the top of the roll-ups and bake for an additional 15-20 minutes until the cheese is melted and the zucchini is cooked through.
Serve:

Remove from the oven and let cool slightly. Serve warm with marinara sauce for dipping. Garnish with fresh basil or parsley if desired.
