Black Forest cheese cake
Black Forest cheese cake is an interesting variation of the classic. Here, Black Forest cherry meets cheesecake. The delicious recipe with cherries and chocolate glaze is an eye-catcher on every cake table.
INGREDIENTS (For a 26 cm tin)
FOR THE DOUGH
175 g wheat flour (type 405)
90 g icing sugar
20 g baking cocoa
1 pinch of salt
100 g butter
1 egg (size M)
FOR THE CHERRY FILLING
1 jar of cherries (drained weight: 350 g)
2 tbsp cornstarch
1 tbsp sugar
1 pinch of cinnamon
FOR THE CHEESECAKE FILLING
1,000 g low-fat quark
125 g sugar
70 g cornstarch
3 eggs (size M)
1 packet of vanilla sugar (37 g each)
1 tsp vanilla extract
FOR THE GLAZE
200 g dark chocolate
100 g cream
20 g coconut oil
ALSO

PREPARATION
Step 1
Grease a springform pan (⌀ 26 cm) with butter and dust with flour. For the dough, sift flour, icing sugar, baking cocoa and salt into a bowl. Add butter and egg and knead with a mixer to form a compact dough. Wrap the dough in cling film and chill for about 30 minutes.
Step 2
Roll out the dough on a lightly floured work surface, press it into the springform pan and pull up an edge. Prick the dough several times with a fork. For the cherry filling, put the cherries in a sieve and collect the liquid. Bring two thirds of the cherry juice to the boil in a saucepan.
Step 3
Use a whisk to mix the remaining cherry juice with the cornstarch, sugar and cinnamon until smooth. As soon as the cherry juice boils in the pan, stir in the mixture and bring the whole thing to the boil once, stirring constantly. Then add the cherries, remove the mixture from the heat and allow to cool.
