Asparagus toast

Asparagus toast

Making asparagus toast in the oven is child’s play! The ham, the baked cheese and the ready-made hollandaise sauce make the recipe wonderfully spicy and juicy. The ideal quick dinner!

INGREDIENTS

3 liters of water
1 tablespoon salt
1 teaspoon sugar
250 g white asparagus
250 g green asparagus
½ bunch of chives
4 slices of toast
8 slices of cooked ham (approx. 200 g)
150 ml hollandaise sauce
100 g grated Gouda (48% fat)

PREPARATION

1. Heat water in a pan with salt and sugar.

2. First wash the asparagus and let it drain. Peel 3/4 of the white asparagus and 1/3 of the green asparagus. Cut off or break off the woody ends.  This makes it easy to see whether there is still skin on the asparagus. Tie it together with asparagus twine if desired.

3. As soon as the water boils, add both types of asparagus, then reduce the temperature and cook in the boiling water. After 5-7 minutes, remove the green asparagus from the water first, drain in a sieve and set aside. Cook the white asparagus for 10-15 minutes, then remove and drain as well.

4. Wash the chives, drain and cut into fine rings. Preheat the oven to 200 degrees top and bottom heat (fan oven: 180 degrees) and line a baking tray with baking paper.

5. Toast the slices of toast in the toaster (or in a pan) until golden brown, place on the baking tray and cover each with 2 slices of ham. Halve the asparagus in the middle, spread evenly on the ham and drizzle with hollandaise sauce.

6. Finally, sprinkle with Gouda and bake in the upper third of the preheated oven for about 8 minutes. Remove the toast from the oven and serve sprinkled with chives. Enjoy!
