Quark casserole with cherries
Quark casserole with cherries evokes pure nostalgia. This simple recipe is so quick to make. The cherry and quark casserole tastes best when served with vanilla sauce.
INGREDIENTS
1 jar of cherries (340 g drained weight)
4 eggs (size M)
120 g sugar
1 packet of vanilla sugar
500 g quark
75 g soft wheat semolina
Some fat for the mold
Some powdered sugar for dusting
PREPARATION
Step 1
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Grease a small casserole dish (15 cm x 23 cm). Drain the cherries over a sieve and use the collected juice for something else.
Step 2
Put the eggs in a bowl and beat them with a hand mixer until frothy. Gradually add the sugar and vanilla sugar and beat with the eggs until creamy. Carefully fold the quark into the egg mixture so that the air is not beaten out again. Then gently mix the soft wheat semolina into the quark mixture.
Step 3
Pour the quark mixture into the casserole dish and add the cherries. Bake the curd casserole with cherries in the preheated oven for approx. 25-30 minutes until golden brown. Dust the quark casserole with cherries with a little powdered sugar before serving. The cherry casserole with quark and semolina will keep in the fridge for at least 2 days.

For the creamiest quark and cherry casserole
The recipe also works with spelt semolina, corn semolina or durum wheat semolina – but your quark and semolina casserole with cherries will be the finest and creamiest with soft wheat semolina.
