Selters cake
Our Selters cake from the tray: simple, juicy and as delicious as grandma’s! With this recipe we show you how you can easily make the sponge cake yourself.
INGREDIENTS
FOR THE DOUGH
4 eggs at room temperature (size M)
250 g sugar
2 packets of vanilla sugar (8 g each)
1 pinch of salt
180 ml sunflower or rapeseed oil
400 g flour (type 405)
1 packet of baking powder (16 g)
1 packet of pudding powder (vanilla flavor)
1 teaspoon of lemon zest
180 ml of carbonated mineral water
FOR THE GLAZE
200 g powdered sugar
4 tablespoons of lemon juice
ALSO
some butter for the mold
PREPARATION
1. For the dough, beat the eggs with sugar, vanilla sugar and salt in a food processor or with a hand mixer until creamy. Pour in the oil and beat everything together on the highest setting until frothy.
2. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees) and butter a deep baking tray (approx. 25 x 35 cm).
3. Mix the flour, baking powder, pudding powder and lemon zest and stir into the mixture alternately with mineral water. Pour the dough into the pan, distribute evenly and bake in the preheated oven for approx. 25 minutes. After baking, let cool on a cake rack.
4. Mix the icing sugar with lemon juice until smooth and spread it over the completely cooled seltzer water cake. Sprinkle with sugar pearls if desired and serve cut into 15 pieces. Enjoy!
