Eton Mess

Eton Mess

Eton Mess is simply the perfect summer dessert. The English recipe with strawberries, cream and meringue is served in glasses and is prepared in no time.

INGREDIENTS (For 6 servings)

1,000 g fresh strawberries
100 g sugar
1 tbsp lemon juice
150 g meringue
300 g cream
100 g sour cream
1 tsp vanilla extract
ยผ tsp salt

PREPARATION

Step 1
Wash the strawberries, dry them and remove the green parts. Halve or quarter the berries depending on their size and mix with 75 g sugar in a bowl. Set aside a third of the sugared strawberries.

Step 2
Put two thirds of the strawberries in a saucepan and bring to a simmer on a medium heat. The berries should release juice, otherwise you can add a little water.ย  Simmer the strawberries for about 15-20 minutes, stirring occasionally, until they become soft and boil down to a thick compote (about 300 g). Allow the compote to cool completely, then mix it with the lemon juice into the fresh strawberries.

Step 3
Prepare 6 glasses (250 ml each). Roughly crumble the meringue. Lightly beat the cream, sour cream, 25 g sugar, vanilla extract and salt until stiff. Layer the cream, meringue and strawberries alternately in this order in the glasses. Serve the Eton Mess immediately, as the meringue will become soggy over time.
