INGREDIENTS
FOR THE DOUGH
250 g flour
½ tsp salt
1 egg
100 ml water
2 tbsp olive oil
some flour (for rolling out)
FOR THE TOPPING
500 g asparagus (green and white)
salt and pepper
1 pinch of sugar
1 bunch of spring onions
150 g crème fraîche
50 g diced bacon
some chopped parsley (optional)
PREPARATION
1. For the tarte flambée dough, mix the flour with salt in a large bowl. Add the egg, water and olive oil and work everything into a smooth dough. Roll the tarte flambée dough into a ball, wrap in cling film and leave to rest for about 30 minutes.
2. For the topping, wash the asparagus in the meantime and peel if necessary. Cut the asparagus stalks diagonally into thin slices and marinate in a bowl with salt, pepper and sugar while you process the remaining ingredients.
3. Preheat the oven to 220 degrees top and bottom heat (200 degrees fan oven). Wash and clean the spring onions and cut into thin rings. Roll out the tarte flambée dough on a lightly floured piece of baking paper and then carefully place it on the baking tray.
4. Spread the dough evenly with crème fraiche, leaving a narrow edge free. Cover with the marinated asparagus. Sprinkle with spring onion rings and bacon cubes. Season with salt and pepper.
5. Bake the asparagus tarte flambée in the preheated oven for about 20 minutes until the bacon cubes are crispy and the dough is golden brown. Remove and allow to cool for about 3-5 minutes. Cut into pieces and serve with a little chopped parsley if desired. A green salad goes well with it. Enjoy!
