Just baked this incredible Chocolate Strawberry Cake! The perfect blend of rich chocolate and fresh strawberries!
Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup whole milk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 cup fresh strawberry puree
1 teaspoon vanilla extract
Fresh strawberries for garnish
Directions:
Preheat oven to 350°F (175°C). Grease and flour three 9-inch round baking pans.
In a large bowl, stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.
Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter.
Distribute cake batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool for about 10 minutes, then remove from the pan and cool completely.
To make the buttercream, beat butter on high speed until creamy and smooth, about 1 minute. Gradually add powdered sugar, beating on low speed, then increasing to high speed once sugar is incorporated.
Add strawberry puree and vanilla extract and beat on high speed until light and fluffy.
Assemble the cake by placing one layer on a serving plate and spreading with a thick layer of strawberry buttercream. Repeat with remaining layers.
Frost the top and sides of the cake with the remaining buttercream and garnish with fresh strawberries.
