Quark pancakes
Our juicy quark pancakes made according to grandma’s recipe are really brilliant. With the light citrus note and a hint of vanilla, they are simply irresistibly delicious!
INGREDIENTS
FOR THE QUARK PANCAKES
6 eggs (size M)
30 g sugar
1 pinch of salt
½ organic lemon
125 g low-fat quark
180 ml milk
60 g wheat flour (type 405)
1 pack of vanilla pudding powder
ALSO
80 g butter for frying
PREPARATION
1. For the pancake batter, briefly beat the eggs and sugar with a hand mixer and add a pinch of salt. Wash the lemon in hot water and dry it. Grate ¼ teaspoon of the peel (for 8 pancakes) with a fine grater. Add lemon zest, low-fat quark and milk to the egg and sugar mixture and stir well.
2. Mix the flour with the vanilla pudding powder and add it too. Mix everything together to form a smooth dough and let the dough swell for 20 minutes.
3. To bake the pancakes, heat a coated pan on a medium heat and add a little butter. Put a portion of dough in the middle of the pan and gently swirl the pan. Turn the pancake over as soon as the dough is no longer liquid. Bake each pancake for 3-4 minutes. Do this with the dough until it is used up. Serve the quark pancakes as fresh as possible. Enjoy!
