INGREDIENTS
1 onion
3 – 4 garlic cloves
600 g broccoli
3 tbsp olive oil
1 liter broth (e.g. vegetable broth or chicken broth)
250 g cream
Salt and pepper
500 g short pasta (e.g. ear pasta or penne)
150 g Parmesan
Some basil (optional)
PREPARATION
1. For the one pot pasta, peel the onion and dice finely. Peel the garlic cloves and press or chop finely. Cut the broccoli into small florets. Peel the stalk and cut into bite-sized cubes.
2. Heat the oil in a large pot. Sauté the onions over medium heat until translucent. Add the garlic and fry for 1 minute. Pour in the stock and cream and season well with salt and pepper. Add the broccoli and pasta. Mix everything thoroughly.
3. Bring the one pot pasta to the boil once. Reduce the heat a little, cover the pot with a lid and let the pasta simmer gently for about 15 minutes. Stir frequently. In the meantime, finely grate the Parmesan. Alternatively, use grated Parmesan.
4. As soon as the broccoli pasta is al dente, stir in the Parmesan and season again with salt and pepper. Divide between plates and optionally garnish with a little basil. Enjoy your meal!
