๐Ÿ“ Ingredients:

For the chocolate sponge:3/4 cup all-purpose flour1/2 cup unsweetened cocoa powder3/4 teaspoon baking powder1/2 teaspoon baking soda1/4 teaspoon of salt3 large eggs1 cup of sugar1/3 cup vegetable oil1/2 cup buttermilkFor the cherry filling:2 cups drowned cherries, fresh or canned1/2 cup cherry juice (canned or fresh)2 tablespoons cornstarch1/4 cup sugar

For the whipped cream:1 1/2 cups heavy cream3 tablespoons of powdered sugar1 teaspoon of vanilla extract

Preheat the oven to 350ยฐF (175ยฐC).ย  Grease and flour two 8-inch cake pans.In a bowl, mix the flour, cocoa, baking powder, baking soda and salt.In another bowl, beat eggs and sugar until fluffy. Gradually add oil and buttermilk, mixing until combined. Fold in dry ingredients.Divide the batter between the pans and bake for 25-30 minutes.ย  Cool on a rack.For the filling, combine the cherry juice, cornstarch and sugar in a saucepan.ย  Add the cherries and cook over medium heat until thickened.ย  Totally cool.For the whipped cream, beat the heavy cream with powdered sugar and vanilla until stiff peaks form.Assemble the cake by placing a layer of sponge on a plate, top with half the cherry filling and a layer of whipped cream.ย  Repeat with the second layer.Refrigerate for at least 1 hour before serving.Preparation time: 30 minutes |ย  Cooking time: 30 minutes |ย  Total time: 2 hours (including cooling and assembly)Kcal: 450 kcal per serving |ย  Servings: 12 servings
