Ingredients:
For the Meringue Layers:
5 large egg whites
1 cup (200 g) granulated sugar
1 teaspoon vanilla extract
1 cup (100 g) ground almonds
1/4 cup (30 g) all-purpose flour
A pinch of salt
For the Buttercream Filling:
1 cup (225 g) unsalted butter, softened
1 cup (120 g) powdered sugar
1/2 cup (120 ml) milk
1 teaspoon vanilla extract
1-2 tablespoons dark rum (to taste)
1/4 cup (25 g) ground almonds (for added texture)
For the Glaze:
1/2 cup (120 ml) heavy cream
4 oz (113 g) dark chocolate, chopped
1 tablespoon unsalted butter
1 tablespoon powdered sugar (optional, for sweetness)
For Decoration:
Sliced almonds or chopped pistachios
Dark chocolate for drizzling (optional)

Instructions:
Step 1: Prepare the Meringue Layers
Preheat Oven:
Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
Make Meringue:
In a clean mixing bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy. Add vanilla extract and mix.
Fold in Dry Ingredients:
Gently fold in the ground almonds and flour until fully combined, being careful not to deflate the meringue.
Shape Layers:
Divide the meringue mixture into two equal parts. Spread each portion into a round cake layer (about 9 inches in diameter) on the prepared baking sheets.
Bake:
Bake for 25-30 minutes until lightly browned and firm to the touch. Allow the meringue layers to cool completely on the baking sheets.
Step 2: Prepare the Buttercream Filling
Make Buttercream:
In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar and beat until fluffy. Add milk, vanilla extract, rum, and ground almonds, mixing until well combined.
Step 3: Assemble the Torte
Layer the Cake:
Place one meringue layer on a serving platter. Spread half of the buttercream evenly over the top. Place the second meringue layer on top and spread the remaining buttercream over the top.
Step 4: Prepare the Glaze
Make the Glaze:
In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chopped dark chocolate and butter. Stir until melted and smooth. If desired, add powdered sugar for extra sweetness.
Step 5: Finish the Torte
Glaze the Torte:
Pour the chocolate glaze over the top of the assembled torte, spreading it evenly.
Decorate:
Sprinkle sliced almonds or chopped pistachios around the edge of the torte for decoration. If desired, drizzle melted dark chocolate over the top for an elegant finish.
Serve:
Chill the torte in the refrigerator for at least 1 hour before slicing. Serve cold and enjoy the delightful layers of meringue and buttercream!
Enjoy your delicious Hungarian Esterházy Torte!
