Baked Pineapple Pie
A delicious pie with a crispy crust and juicy pineapple filling, perfect for dessert or a snack.
Ingredients
For the dough
• 2 cups all-purpose flour (unprepared)
• ½ cup powdered sugar
• ½ teaspoon salt
• 150g cold butter, cubed
• 1 egg yolk
• 3 tablespoons cold water
For the filling
• 2 cups chopped fresh pineapple (or canned pineapple, well drained)
• ½ cup sugar
• ¼ cup water
• 1 tablespoon cornstarch dissolved in 2 tablespoons water
• ½ teaspoon vanilla extract (optional)
For decoration
• 1 beaten egg (for brushing)
• Powdered sugar (optional)
• Whipped cream or vanilla ice cream (for serving)

Preparation
1️⃣ Dough
1. In a bowl, mix the flour, powdered sugar, and salt.
2. Add the cold butter and, using your fingertips or a fork, mix until you get a sandy texture.
3. Add the egg yolk and cold water, mixing until a smooth dough forms.
4. Wrap in plastic wrap and refrigerate for 30 minutes.
2️⃣ Pineapple Filling
1. In a saucepan, combine the pineapple, sugar, and water. Cook over medium heat, stirring occasionally, until the pineapple is tender (≈10 minutes).
2. Add the dissolved cornstarch and cook, stirring, until thickened.
3. Remove from heat, stir in the vanilla, and let cool.
3️⃣ Assembling the Pie
1. Preheat the oven to 180°C (350°F).
2. Divide the dough in two: a large portion for the base and a smaller portion for the lid or rack.
3. On a floured surface, roll out the large portion until it covers the bottom and edges of a pie plate (≈23 cm). Trim off any excess.
4. Pour the pineapple filling into the pan.
5. Roll out the remaining dough and cut it into strips to form a rack, or cover the entire pan, sealing the edges well. Make small slits to allow steam to escape.
6. Brush the surface with beaten egg.
4️⃣ Baking
• Bake for 30–35 minutes, or until the pastry is golden brown.
• Remove from the oven and let cool completely before removing from the pan.
